I'm guessing from my own personal experience and from what I've heard from optometrists that when you sleep, your eyes are closed, therefore your eye isn't getting the same oxygen and moisture it would usually get when you're awake. It's just your eye compensating for the moisture lost during the night. It also has to get adjusted to the light which may make your eyes irritated and start to water. That's what happens to me sometimes in the morning. Hope this helps, if not, see a doctor.
